Behind the Spoon

Hi, my name is Coralie and I am a senior in high school. Growing up food has always been a big part of my life and I have always had a love-hate relationship with it. There, I said it. Over the years I would give in to it's many temptations only to be hurt by it in the end when my favorite jeans refused to slide on without a struggle. I enjoy nothing more than a large, comforting meal of spaghetti and meatballs with my family, but like many, regret having ever gone near it the morning after. Another thing I love even more than food is traveling. Although I am far from a world traveler I have been fortunate enough to see some amazing places and sample their culinary skills. My two favorite things now combined in one! I love learning about different cultures and traditions through the dishes they offer, whether it comes from a little authentic Greek restaurant near my home, or a mountain top, family owned pizzeria in Sorrento, Italy. However now that I am older (and a little wiser) I still have the same love for food (I'll never give up the mac n' cheese); however, I have learned that food can be savored without the sacrifice of morning-after regrets. This is where I discovered my new passion, nutrition. Going into my last year of high school I was given the opportunity to take a selective class that allows each student to individually create their own course designed around something they feel passionate about. Here was my big opportunity!I knew that this class would be the chance for me to dive deeper into what I love. I could teach myself about nutrition, clean eating, and what it truly means to live a healthy lifestyle. So here I am, educating myself and sharing my discoveries in hopes to make healthy eating more enjoyable, one spoonful at a time.
